Pomegranate & Feta salad
This super easy pomegranate & feta salad is an ideal side dish to a heavy main like roasted chicken or lamb kofte.
This salad does not need much introduction. It’s simple and delicious, combining Mediterranean and Azerbaijani flavours in one bowl. When I was a child my grandma often bought fresh lettuce and made a simple salad from lettuce, lemon juice, olive oil and salt. Reminiscing on those flavours, this salad is an extension of my grandma’s simple side dish. Serve this with roasted chicken, kofte (meatballs) or as a quick lunch dish.
Ingredients
Serves 4
1/2 of a large pomegranate or one small
1 bunch of looseleaf lettuce (can be substituted with iceberg lettuce, coral lettuce, and the like)
1 cup of parsley
200 grams Feta cheese
2 large English cucumbers or 4-5 small (Lebanese/Turkish)
2 shallots
1/2 teaspoon sumac
1/2 teaspoon sea salt or table salt
Juice of 1/2 lemon
2 tablespoons of olive oil
Method
Extract pomegranate seeds. The quickest way to do so is to cut your pomegranate in half and smack it with a wooden spoon. Use a deep bowl for this as otherwise, the juice will go everywhere.
Coarsely chop lettuce, cucumbers, parsley, shallots.
In a large bowl mix your chopped ingredients, add pomegranate seeds, sumac, salt, feta cheese broken into large pieces or cut in cubes, lemon juice, and olive oil.
Toss gently and serve immediately.
